- 1 pound green beans
- 1 medium red onion
- 8 ounces firm tofu
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic

Trim the 1 pound green beans and cut them into 2-inch pieces. Slice the 1 red onion into thin wedges. Pat the 8 ounces tofu dry and cut into 1/2-inch cubes.

Heat 1 tablespoon of the vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook, turning occasionally, until golden on all sides, about 6 minutes. Remove tofu to a plate.

Add the remaining 1 tablespoon oil to the skillet. Add the green beans and onion wedges; stir-fry until beans are bright green and tender-crisp, about 5 minutes.

Add the 2 minced garlic cloves and cook until fragrant, about 30 seconds. Return the tofu to the skillet.
