Ingredients

  • 1 lb lamb sirloin or leg, cut into 1.5-inch cubes
  • ⅓ cup plain Greek yogurt
  • 1 whole lemon (juiced + zested)
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • ½ medium red onion, cut into 1-inch pieces

Instructions

    Mix yogurt, lemon juice, zest, garlic, oregano, salt, and pepper in a bowl until smooth.

    Add lamb cubes and toss until coated. Let sit for 10 minutes while you heat the grill.

    Thread lamb and onion pieces alternately onto 4 metal or soaked wooden skewers.

    Heat a grill or grill pan over medium-high until oil flicks sizzle on the surface.

    Grill skewers 3–4 minutes per side until lamb edges char and meat is medium-rare inside.

    Remove skewers and rest 2 minutes. Squeeze fresh lemon over top and serve hot.
