Ingredients

  • 2 pieces barley rusks
  • 2 medium ripe tomatoes
  • 100 g feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes

Instructions

    Roughly chop the 2 tomatoes into small cubes and place them in a bowl. Add 1 tsp dried oregano and a pinch of salt, then toss to combine.

    Lightly wet the 2 barley rusks under running water for a few seconds each — they should be damp but not soggy. Place them on a serving plate.

    Spoon the tomato mixture evenly over the rusks, letting the juices soak in.

    Crumble the 100g feta over the top, then drizzle with the 2 tbsp olive oil and sprinkle with the 0.5 tsp red pepper flakes. Serve immediately.
