Ingredients
- 3 cups rolled oats
- 1 cup mixed nuts (e.g., almonds, walnuts)
- 1 cup unsweetened coconut flakes
- ½ cup honey or maple syrup
- ¼ cup coconut oil
- ½ cup dried fruit (e.g., raisins, cranberries)
- ½ teaspoon salt
Instructions
- 1
Preheat oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- 2
In a large bowl, combine 3 cups oats, 1 cup nuts, 1 cup coconut flakes, and 0.5 tsp salt.
- 3
In a small saucepan, melt 0.25 cup coconut oil with 0.5 cup honey over low heat, stirring until smooth, about 2 minutes.
- 4
Pour the oil-honey mixture over the dry ingredients and stir until everything is evenly coated.
- 5
Spread the mixture in a thin, even layer on the prepared baking sheet.
- 6
Bake for 20-25 minutes, stirring halfway, until golden brown and fragrant. Let cool completely on the sheet—it will crisp as it cools.
