Ingredients

  • 1.5 cups all-purpose flour
  • ½ cup butter
  • ½ cup sugar
  • 2 large eggs
  • 1 cup milk
  • ¼ cup pine nuts

    Preheat oven to 375°F. In a bowl, mix 1.5 cups flour, 1/4 cup sugar, and 1/2 cup cold butter until crumbly. Press into a 9-inch tart pan, forming a crust up the sides.

    In a saucepan, whisk 2 eggs, 1/4 cup sugar, and 1 cup milk. Cook over medium heat, stirring constantly, until thickened and bubbling, about 5 minutes. Remove from heat and stir in 1 tsp vanilla extract.

    Pour the custard into the crust. Sprinkle 1/4 cup pine nuts evenly over the top.

    Bake until the custard is set and the crust is golden, about 25 minutes. Let cool completely before slicing. Garnish with mint and orange zest if desired.
