- 1 cup gram flour (besan)
- ½ cup ghee
- ¾ cup sugar
- 1.5 cups water
- 4 whole cardamom pods
- ¼ teaspoon saffron strands
- 2 tablespoons sliced almonds
- 2 tablespoons coconut flakes

Heat a heavy skillet over medium-low heat. Add the 1 cup gram flour and 4 crushed cardamom pods. Toast, stirring constantly, until the flour turns golden and smells nutty, about 8-10 minutes.

Add the 1/2 cup ghee to the toasted flour. Stir well and cook for another 5 minutes, until the mixture bubbles gently and looks like wet sand.

Meanwhile, in a small bowl, soak the 1/4 teaspoon saffron strands in 2 tablespoons of warm water. Set aside.

In a saucepan, bring the 1.5 cups water and 3/4 cup sugar to a boil. Stir until the sugar dissolves completely, about 2 minutes.

Slowly pour the hot sugar syrup into the flour-ghee mixture, stirring constantly to avoid lumps. Cook over medium heat, stirring, until the mixture thickens and pulls away from the sides of the pan, about 5-7 minutes.

Stir in the saffron with its soaking water. Cook for 1 more minute until the pudding is glossy and aromatic.
