Ingredients

  • 1.5 cups long-grain white rice
  • 1 medium carrots, diced
  • ¾ cup frozen peas
  • ½ medium yellow onion, finely diced
  • 1.5 tsp turmeric powder
  • ½ cup coconut milk
  • ¼ cup fresh cilantro or parsley, chopped

Instructions

    Heat 2 tbsp oil in a large pot over medium-high. Add diced onion and cook until softened, about 3 minutes.

    Add diced carrot and stir for 1 minute. Sprinkle turmeric and stir until fragrant, about 30 seconds.

    Pour in rice and stir to coat with oil, 1 minute. Add 2.75 cups water and coconut milk, then stir.

    Bring to a boil, then cover, reduce heat to low, and simmer 15 minutes without lifting the lid.

    Stir in frozen peas, re-cover, and cook 2 minutes until peas are heated through.

    Remove from heat. Fluff with a fork, scatter cilantro on top, and serve hot.
