Ingredients

  • 1.5 cups pumpkin puree
  • 3 cups vegetable broth
  • ½ cup sweet rice (glutinous rice)
  • 3 tbsp brown sugar
  • 2 tbsp unsalted butter
  • 2 medium apples (Granny Smith or Honeycrisp)
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon

Instructions

    Slice apples into thin half-moons, discarding cores. Set aside.

    Heat 0.5 tbsp butter in a skillet over medium-high until foaming, then sauté apples with a pinch of salt for 4 minutes until golden and caramelized. Transfer to a plate.

    In the same pot, combine pumpkin puree, broth, and rice. Bring to a simmer over medium heat.

    Stir in brown sugar and cinnamon, then simmer for 12 minutes, stirring occasionally, until rice is tender and porridge thickens.
