- 1 cup boiling water
- 2 cups neutral oil (for frying)
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
- 4 oz dark chocolate (chopped or chips)

Heat oil in a large shallow pan over medium-high until a pinch of flour sizzles instantly (~2 minutes).

Mix flour and boiling water in a bowl until a soft dough forms. Transfer to a piping bag fitted with a large star tip.

Carefully pipe 4-inch churro lengths directly into the hot oil. Fry 2–3 churros at a time until golden brown, about 60 seconds per side.

Transfer fried churros to a paper towel–lined plate. Mix sugar and cinnamon in a shallow bowl, then immediately toss warm churros to coat.

Melt chocolate in a microwave-safe bowl in 30-second intervals, stirring between, until smooth. Thin with 1 tbsp hot water if needed.
