- 1 lb goat meat
- 1 medium onion
- 1 whole scotch bonnet pepper
- 1 tsp ground cayenne pepper
- 2 sprigs fresh thyme
- 1 tsp salt

Cut the 1 lb goat meat into bite-sized pieces and place in a pot. Add 4 cups water and bring to a boil over high heat, skimming off any foam that rises, about 5 minutes.

Add the 1 sliced onion, 1 whole scotch bonnet pepper (pierced with a knife), 1 tsp cayenne, 2 sprigs thyme, and 1 tsp salt. Reduce heat to medium-low and simmer until the meat is tender, about 15 minutes.

Taste the broth and adjust seasoning with more salt or cayenne if needed. Remove the whole pepper and thyme sprigs before serving.
