Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
- 1 can (13.5 oz) coconut milk
- 2 tbsp ginger-garlic paste
- ¼ cup roasted unsalted peanuts, crushed
- 1.5 tsp garam masala
- 1 tsp ground coriander
- ½ tsp red chili powder

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add chicken pieces and sear 4–5 minutes, stirring occasionally, until golden on edges.

Stir in ginger-garlic paste, garam masala, coriander, and chili powder. Cook 60 seconds until fragrant.
