Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp ginger-garlic paste
  • ¼ cup roasted unsalted peanuts, crushed
  • 1.5 tsp garam masala
  • 1 tsp ground coriander
  • ½ tsp red chili powder

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add chicken pieces and sear 4–5 minutes, stirring occasionally, until golden on edges.

    Stir in ginger-garlic paste, garam masala, coriander, and chili powder. Cook 60 seconds until fragrant.

    Pour in coconut milk and crushed peanuts. Stir to combine, then simmer 8–10 minutes until chicken is cooked through.

    Season with salt and pepper to taste. Serve hot with rice or flatbread.
