Ingredients
- 1.25 lb boneless chicken thighs, patted dry
- ¾ cup all-purpose flour
- ⅓ cup soy sauce
- 8 cloves garlic, minced
- 2 tbsp granulated sugar
- 2 cups neutral cooking oil for frying

Season chicken with salt and pepper. Dredge each piece in flour, shaking off excess.

Heat oil in a large skillet over medium-high until a pinch of flour sizzles immediately.

Fry chicken 6–7 minutes per side without moving until deep golden brown. Transfer to a plate.

Drain all but 2 tbsp oil from the skillet. Add garlic and cook 30 seconds until fragrant.
