Ingredients

  • 1.25 lb boneless chicken thighs, patted dry
  • ¾ cup all-purpose flour
  • ⅓ cup soy sauce
  • 8 cloves garlic, minced
  • 2 tbsp granulated sugar
  • 2 cups neutral cooking oil for frying

Instructions

    Season chicken with salt and pepper. Dredge each piece in flour, shaking off excess.

    Heat oil in a large skillet over medium-high until a pinch of flour sizzles immediately.

    Fry chicken 6–7 minutes per side without moving until deep golden brown. Transfer to a plate.

    Drain all but 2 tbsp oil from the skillet. Add garlic and cook 30 seconds until fragrant.

    Pour soy sauce and sugar into the skillet. Stir constantly for 1 minute until glossy and caramelized.

    Return chicken to the skillet and toss to coat completely. Serve hot with the glaze dripping.
