Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • ⅓ cup soy sauce
  • 6 cloves garlic, minced
  • 2 tbsp granulated sugar
  • 1 tbsp rice vinegar
  • 6 oz radishes
  • 1 tbsp sesame seeds
  • ½ cup all-purpose flour

Instructions

    Pat chicken dry with paper towels. Toss with flour, salt, and pepper until evenly coated.

    Heat 0.5 inch neutral oil in a 12-inch skillet over medium-high until shimmering, about 2 minutes.

    Lay chicken flat in hot oil without crowding. Fry undisturbed for 5 minutes until deep golden.

    Flip chicken and fry another 4 minutes until cooked through and skin crisps. Transfer to a plate.

    Pour off all but 1 tbsp oil. Add minced garlic and cook 30 seconds until fragrant, then add soy sauce, sugar, and vinegar.

    Return chicken to skillet and toss constantly for 1 minute until glossy and coated. Slice radishes thin, toss with salt and vinegar.

    Plate chicken, top with sesame seeds, and serve with pickled radishes on the side.
