Ingredients
- 1.5 lbs chicken thighs, boneless and skinless
- ½ cup cornstarch
- ¼ cup soy sauce
- 6 cloves garlic, minced
- 3 tbsp brown sugar
- 1 tbsp rice vinegar
- 2 tbsp sesame seeds and green onion, sliced

Pat chicken thighs dry and cut into 2-inch pieces if very large. Toss with cornstarch, salt, and pepper until evenly coated.

Heat 0.5 cup neutral oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Working in batches, fry chicken 5–6 minutes per side until golden brown and cooked through. Transfer to a paper-towel-lined plate.

Pour off all but 1 tbsp oil from the skillet. Add minced garlic and cook 30 seconds until fragrant.

Stir in soy sauce, brown sugar, and rice vinegar. Bring to a bubble and cook 1 minute until syrupy.

Return chicken to the skillet and toss to coat in the glaze, 30 seconds. Plate and top with sesame seeds and green onion.
