Ingredients

  • 1.5 lbs chicken wings
  • 4 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 2 cups cooked white rice
  • ¾ cup frozen peas and carrots
  • 2 whole scallions, sliced

Instructions

    Pat wings dry. Toss with salt, pepper, and half the soy sauce on a sheet pan.

    Roast at 425°F for 15 minutes until edges crisp and skin turns golden.

    Stir ginger into remaining soy sauce. Pour over wings, toss to coat.

    Return to oven for 3 minutes until glaze sets and looks glossy.

    While wings finish, warm rice and frozen vegetables in a skillet over medium-high, stirring often, until heated through and lightly browned, about 3 minutes.
