Ingredients

  • 1.5 lbs pork spare ribs (pre-cut into individual bones)
  • 4 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp fresh ginger (grated)
  • 3 cloves garlic cloves (minced)
  • ½ cup water

Instructions

  1. 1

Heat oil in a large skillet over medium-high until shimmering, about 1 minute.

  2. 2

Working in batches, sear ribs for 2 minutes per side until browned — don't crowd the pan.

  3. 3

Whisk soy sauce, mirin, ginger, garlic, and water in a small bowl until combined.

  4. 4

Return all ribs to the skillet and pour the sauce over them.

  5. 5

Simmer uncovered for 10–12 minutes, stirring occasionally, until sauce is glossy and ribs are tender.

  6. 6

Serve immediately with rice or steamed vegetables.
