Ghanaian Jollof Rice

Ingredients
- 1 cup long-grain rice
- 2 tbsp tomato paste
- 1 medium onion
- 1 medium red bell pepper
- 1 cup cooked chicken or beef
- 2 tbsp vegetable oil

Blend the 1 onion and 1 red bell pepper with 1/4 cup water until smooth. Set aside.

Heat 2 tbsp vegetable oil in a pot over medium. Add 2 tbsp tomato paste and fry, stirring, until darkened, about 3 minutes.

Pour in the blended pepper-onion mixture. Cook, stirring, until thickened and reduced, about 5 minutes.

Stir in 1 cup rice and 1 cup water. Season with salt and pepper. Cover and simmer on low until rice is tender and liquid absorbed, about 15 minutes.

Fold in 1 cup cooked chicken or beef. Let sit 2 minutes, then fluff with a fork and serve.
