Ingredients

  • 1 lb ground beef
  • 10 oz small pasta (hörnli or ditalini)
  • 1 medium onion, diced
  • 14.5 oz canned crushed tomatoes
  • 1 cup beef broth
  • 2 sprigs fresh thyme (or 1 tsp dried)
  • ½ cup panko breadcrumbs

Instructions

  1. 1

Heat 2 tablespoons of olive oil in a large skillet or saucepan over medium-high heat until shimmering.

  2. 2

Add diced onion and cook until softened and golden, ~3 minutes, stirring occasionally.

  3. 3

Add ground beef and cook, breaking it apart with a spoon, until browned with no pink, ~6 minutes.

  4. 4

Stir in crushed tomatoes, broth, and thyme. Bring to a simmer.

  5. 5

Add pasta directly to the pan and stir well. Simmer uncovered until pasta is tender, ~10 minutes.

  6. 6

Taste and season with salt and pepper. Discard thyme sprigs if using fresh.

  7. 7

In a small bowl, toss panko with 2 tablespoons melted butter and a pinch of salt.

  8. 8

Sprinkle breadcrumb mixture evenly over the surface of the pasta.

  9. 9

Place under the broiler for 2–3 minutes until breadcrumbs turn golden brown. Watch closely.

  10. 10

Remove from heat and let rest 2 minutes. Serve hot in bowls.
