Ingredients
- 8 oz egg noodles
- 2 medium carrots
- 2 medium celery stalks
- 1 medium onion
- 6 cups vegetable broth
- 1 tbsp dried parsley
- 1 tsp salt
- ½ tsp black pepper

Peel and dice the 2 carrots and 2 celery stalks into small pieces. Peel and finely chop the 1 onion.

In a large pot, heat 1 tbsp olive oil over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.

Add the carrots and celery to the pot. Cook, stirring occasionally, until they begin to soften, about 5 minutes.

Pour in the 6 cups vegetable broth and bring to a boil. Add the 8 oz egg noodles and 1 tbsp dried parsley.
