Ingredients

  • 1.25 lb Chinese eggplant (or Japanese eggplant), halved lengthwise
  • 6 whole garlic cloves, minced
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp granulated sugar
  • 2 tbsp neutral cooking oil

Instructions

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Place eggplant cut-side down in the hot skillet and sear 4 minutes until the surface turns golden and begins to soften.

    Flip eggplant skin-side down. Add minced garlic to the pan and stir for 30 seconds until fragrant.

    Pour in soy sauce, vinegar, sugar, and 1/4 cup water. Bring to a simmer and braise for 6 minutes until eggplant is very tender.

    Tilt the skillet and spoon the glossy sauce over the eggplant. Transfer to a plate and pour all sauce on top.
