Ingredients
- 1 lb shrimp, peeled and deveined
- 1 medium cucumber, diced
- 1 large tomato, diced
- ½ medium red onion, thinly sliced
- 2 whole lime, juiced
- ½ cup cocktail sauce

Bring a pot of salted water to a boil. Add the 1 lb shrimp and cook until pink and opaque, about 2-3 minutes. Drain and rinse with cold water.

In a large bowl, combine the 1 diced cucumber, 1 diced tomato, and 1/2 sliced red onion. Squeeze the juice of 2 limes over the vegetables and toss to coat.
