Ingredients

  • 4 pieces (about 1 lb) lamb chops (1.5 to 2 inches thick)
  • 4 cloves garlic cloves, smashed
  • 3 sprigs fresh rosemary sprigs
  • 3 tbsp olive oil
  • ½ lemon lemon
  • 1 pinch salt and black pepper to taste

Instructions

    Pat lamb chops dry and season generously with salt and black pepper on both sides.

    Heat olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

    Sear lamb chops 2 minutes per side without moving—they should develop a golden-brown crust.

    Add smashed garlic and rosemary sprigs to the pan around the chops, tilting to coat in oil.
