Ingredients
- 4 pieces lamb chops (1.5 inches thick, preferably rib or loin)
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary or thyme, chopped
- ½ whole lemon
- 1 pinch fleur de sel or finishing salt

Pat lamb chops dry with a paper towel. Season both sides generously with salt and black pepper.

Heat 1 tbsp olive oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Sear chops 90 seconds per side without moving—edges should look opaque, center still pink inside.

Reduce heat to medium. Add butter, garlic, and rosemary; let the butter foam for 30 seconds until fragrant.

Tilt the pan and baste the chops with the garlic-herb butter for another 30 seconds.
