Ingredients

  • 1.5 lbs chicken breasts or thighs, boneless
  • 4 cloves garlic, minced
  • 1.5 whole lemon (zested + juiced)
  • 1 medium red onions, sliced into rings
  • 2 tbsp fresh oregano or parsley, chopped
  • 3 tbsp olive oil

Instructions

    Pat chicken dry. Mix garlic, lemon zest, lemon juice, herbs, olive oil, salt, and pepper in a bowl.

    Toss chicken and red onion rings with the marinade. Spread on a sheet pan in a single layer.

    Roast at 425°F for 14 minutes, stirring halfway through until chicken is opaque throughout.

    Broil for 2 minutes until the chicken edges char slightly and the onions caramelize.

    Scatter fresh lemon slices over the pan. Serve immediately with pan juices drizzled on top.
