Ingredients

  • 2 lb crawfish tails
  • 4 tbsp butter
  • 8 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh parsley

Instructions

  1. 1

Pat dry the 2 lb crawfish tails with paper towels. Season with 1 tsp salt and 0.5 tsp black pepper.

  2. 2

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the crawfish in a single layer and cook until they turn pink and slightly charred, about 3-4 minutes. Remove and set aside.

  3. 3

Reduce heat to medium. Add 4 tbsp butter and 8 minced garlic cloves to the skillet. Cook until fragrant and the garlic is golden, about 2 minutes.

  4. 4

Stir in 1 tsp paprika and cook for 30 seconds until aromatic.

  5. 5

Return the crawfish to the skillet. Toss to coat in the garlic butter sauce and cook until heated through, about 2 minutes.

  6. 6

Remove from heat and stir in 0.25 cup chopped fresh parsley. Serve immediately with crusty bread or rice.
