Ingredients
- 8 cloves garlic cloves
- 6 whole dried red chilies
- 4 whole green chilies
- 10 leaves curry leaves
- 1 teaspoon mustard seeds
- 3 tablespoons vegetable oil
- ½ teaspoon salt

Peel and thinly slice the 8 garlic cloves. Slit the 4 green chilies lengthwise. Keep the 6 dried red chilies whole.

Heat the 3 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the 1 tsp mustard seeds and cook until they splutter, about 30 seconds.

Add the 10 curry leaves and the dried red chilies. Stir-fry for 30 seconds until fragrant, being careful not to burn them.

Add the sliced garlic and green chilies. Stir-fry over medium heat until the garlic turns golden and crispy, about 3-4 minutes.

Season with the 0.5 tsp salt and toss everything together for another minute. Remove from heat and serve hot as a side or over rice.
