Ingredients
- 1.5 lbs boneless chicken thighs, cut into 1.5-inch cubes
- ¾ cup Greek yogurt
- 6 cloves garlic, minced
- 1 whole lemon (juiced + zested)
- 3 tbsp tahini
- 1.5 tsp smoked paprika
- ¼ cup fresh parsley, chopped

Mix 0.5 cup yogurt, 4 cloves minced garlic, lemon zest, paprika, salt, and pepper in a bowl. Add chicken; toss to coat.

Thread chicken onto metal or soaked wooden skewers, packing pieces close together.

Heat your broiler to high or preheat a grill pan to medium-high, about 2 minutes.

Broil or grill skewers 3 to 4 minutes per side, turning once, until edges are charred and center reaches 165°F.
