Ingredients

  • 1.5 lbs boneless chicken thighs, cut into 1.5-inch cubes
  • ¾ cup Greek yogurt
  • 6 cloves garlic, minced
  • 1 whole lemon (juiced + zested)
  • 3 tbsp tahini
  • 1.5 tsp smoked paprika
  • ¼ cup fresh parsley, chopped

Instructions

    Mix 0.5 cup yogurt, 4 cloves minced garlic, lemon zest, paprika, salt, and pepper in a bowl. Add chicken; toss to coat.

    Thread chicken onto metal or soaked wooden skewers, packing pieces close together.

    Heat your broiler to high or preheat a grill pan to medium-high, about 2 minutes.

    Broil or grill skewers 3 to 4 minutes per side, turning once, until edges are charred and center reaches 165°F.

    Whisk remaining 0.25 cup yogurt with tahini, remaining 2 cloves minced garlic, lemon juice, salt, and water until creamy.

    Plate skewers, drizzle with tahini sauce, and scatter parsley on top.
