Ingredients
- 2 steaks (12 oz each) beef ribeye or ny strip steaks (1.5 inches thick)
- 4 tbsp butter
- 6 cloves garlic cloves, smashed
- 4 sprigs fresh thyme sprigs
- ½ cup parmesan cheese, finely grated
- 1 pinch (to taste) salt and black pepper

Pat steaks dry with paper towels. Season generously on both sides with salt and pepper.

Heat a heavy skillet over medium-high until smoking, about 2 minutes.

Sear steaks 90 seconds per side without moving. Surface should be dark golden brown.

Add butter, garlic, and thyme to pan. Tilt and baste steaks for 2 minutes until butter froths.

Sprinkle parmesan thickly over each steak. Let it crisp for 45 seconds, then flip and crisp the other side 45 seconds.
