Ingredients

  • 14 oz total prime rib steaks (2 cuts, 1.5 inches thick)
  • 3 tbsp butter
  • 3 clove garlic cloves, smashed
  • 2 sprig fresh thyme or rosemary sprigs
  • 1 tsp fleur de sel or coarse sea salt
  • ½ tsp black pepper

Instructions

  1. 1

Pat steaks dry with paper towels. Season generously with salt and pepper on both sides.

  2. 2

    Heat a 12-inch cast-iron skillet over medium-high until it rips-hot, about 2 minutes.

  3. 3

Sear steaks 90 seconds per side without moving. They should develop a dark golden crust.

  4. 4

Add butter, garlic, and herbs to the pan. Tilt and baste the steaks with foaming butter for 2 minutes.

  5. 5

Remove steaks to a plate. Let rest 3–4 minutes before serving with pan juices drizzled on top.

Tools you’ll need
