Ingredients
- 2 pieces (6-8 oz each) beef steaks (ribeye or ny strip)
- 3 tbsp butter
- 4 cloves garlic cloves, minced
- ¼ cup parmesan cheese, grated
- 2 sprigs fresh rosemary or thyme (optional)

Pat steaks dry with paper towels. Season both sides generously with salt and black pepper.

Heat a heavy skillet over high heat until a bead of water sizzles and rolls across the surface, about 2 minutes.

Sear steaks 90 seconds per side without moving. Don't touch them — you want a golden crust.

Lower heat to medium. Add butter, garlic, and herbs to the pan around the steaks.
