Ingredients

  • 2 pieces (6-8 oz each) beef steaks (ribeye or ny strip)
  • 3 tbsp butter
  • 4 cloves garlic cloves, minced
  • ¼ cup parmesan cheese, grated
  • 2 sprigs fresh rosemary or thyme (optional)

    Pat steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Heat a heavy skillet over high heat until a bead of water sizzles and rolls across the surface, about 2 minutes.

    Sear steaks 90 seconds per side without moving. Don't touch them — you want a golden crust.

    Lower heat to medium. Add butter, garlic, and herbs to the pan around the steaks.

    Tilt pan and baste steaks with the melted butter for 1–2 minutes until the garlic is fragrant and golden.

    Slide steaks onto a plate, sprinkle with parmesan, pour the garlic butter over top, and serve immediately.
