Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ½ lb smoked sausage, sliced into 1-inch rounds
  • 1 lb baby potatoes, halved
  • 2 ears corn on the cob, cut into 2-inch pieces
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1.5 tbsp Cajun seasoning

Instructions

  1. 1

Preheat oven to 400°F. Tear off two 18-inch sheets of heavy-duty foil.

  2. 2

Divide shrimp, sausage, potatoes, and corn between the two foil sheets.

  3. 3

Dot each packet with 2 tbsp butter and half the garlic. Sprinkle with Cajun seasoning and salt.

  4. 4

Fold foil loosely over the filling and seal by folding edges twice. Leave room for steam.

  5. 5

Bake for 15 minutes until potatoes are fork-tender and shrimp turns opaque.

  6. 6

Carefully tear open (steam will escape). Squeeze lemon over top and serve immediately.
