Ingredients

  • 1.5 lbs beef short ribs (bone-in)
  • 8 cloves garlic, minced
  • ¼ cup white vinegar
  • 3 tbsp soy sauce
  • ½ cup beef broth
  • 2 tbsp olive oil

Instructions

  1. 1

Pat beef ribs dry and season generously with salt and black pepper on both sides.

  2. 2

Heat olive oil in a 12-inch cast iron skillet over medium-high heat until it shimmers, about 90 seconds.

  3. 3

Sear ribs 3 minutes per side without moving — the surface should brown and caramelize.

  4. 4

Add minced garlic and stir constantly for 30 seconds until fragrant, then pour in vinegar, soy sauce, and beef broth.

  5. 5

Reduce heat to medium, cover, and simmer for 8–10 minutes, basting the ribs every 2 minutes with the pan liquid.

  6. 6

Uncover and increase heat to medium-high, cooking another 2–3 minutes until the sauce thickens and coats the ribs.
