- 1 teaspoon salt
- ½ cup all-purpose flour
- ½ cup vegetable oil
- 1 whole lemon

Pat the 1 whole yellow croaker dry with paper towels. Score both sides with shallow diagonal cuts, then rub with 1 tsp salt inside and out. Let sit for 10 minutes.

Dredge the fish in 1/2 cup all-purpose flour, shaking off excess. The fish should be lightly coated, not clumpy.

Heat 1/2 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. The oil should sizzle when a pinch of flour is added.

Carefully place the fish in the hot oil. Fry until the bottom is golden and crisp, about 4-5 minutes. Use a spatula to gently lift and check the color.
