Ingredients

  • 14 oz firm tofu
  • 1 cup sauerkraut
  • 1 medium red bell pepper
  • 3 stalks green onions
  • 3 tbsp vegetable oil
  • 1 tbsp soy sauce

Instructions

    Cut the 14 oz firm tofu into 1-inch cubes and pat dry with paper towels. Slice the 1 red bell pepper into thin strips and chop the 3 green onions into 1-inch pieces.

    Heat the 3 tbsp vegetable oil in a large skillet over medium-high heat. Add the tofu cubes in a single layer and fry until golden and crisp on all sides, about 8 minutes total, turning occasionally.

    Add the sliced red pepper and 1 cup sauerkraut to the skillet. Stir-fry for 3-4 minutes until the pepper is tender-crisp and the sauerkraut is heated through.

    Drizzle with the 1 tbsp soy sauce and toss to coat. Sprinkle with the chopped green onions and serve hot.
