Fried Snapper

A whole crispy fried snapper served with a fresh onion-tomato salad, lime wedges, and fried plantains. A quick, flavorful weeknight meal.

Ingredients

  • 1 whole fish (about 1 lb) whole snapper, cleaned and scaled
  • 2 whole lime
  • 1 medium onion
  • 1 medium tomato
  • ½ cup vegetable oil
  • 1 teaspoon salt

Instructions

    Pat the 1 whole snapper dry with paper towels. Score 3 shallow slits on each side, then rub all over with 1 tsp salt, including inside the cavity.

    Heat 1/2 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. Carefully lay the fish in the hot oil.

    Fry until the underside is golden and crisp, about 5-6 minutes. Carefully flip and fry the other side until equally golden and the flesh flakes easily, another 5-6 minutes.

    While the fish cooks, thinly slice 1 onion and 1 tomato. Toss them together with the juice of 1 lime and a pinch of salt.

    Serve the hot fish with the onion-tomato salad and the remaining lime cut into wedges. Squeeze lime over the fish before eating.
