Ingredients
- 1 lb shrimp, peeled and deveined
- ½ cup all-purpose flour
- 1 large egg
- ¼ cup mayonnaise
- 1 whole lemon
- 2 cups mixed greens
Instructions
- 1
Pat the 1 lb shrimp dry with paper towels. In a shallow bowl, beat the 1 egg. Place the 0.5 cup flour in another shallow bowl. Season both with salt and pepper.
- 2
Heat 0.25 cup vegetable oil in a large skillet over medium-high heat until shimmering, about 2 minutes. While oil heats, dip each shrimp into the egg, then dredge in flour, shaking off excess.
- 3
Working in batches to avoid crowding, fry the shrimp until golden and crispy, about 2-3 minutes per side. Transfer to a plate lined with paper towels to drain.
- 4
In a small bowl, mix the 0.25 cup mayonnaise with the juice of half the lemon and a pinch of salt to make the aioli. Cut the remaining lemon half into wedges.
- 5
Serve the fried shrimp with the aioli, lemon wedges, and 2 cups mixed greens on the side. Squeeze extra lemon over the shrimp if desired.
