Ingredients

  • 2 cups cooked polenta
  • ½ cup all-purpose flour
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

    Scoop the 2 cups cooked polenta into a bowl and mash with a fork until smooth. Season with 1 tsp salt and 1/2 tsp black pepper.

    Shape the polenta into 1-inch balls using your hands. If sticky, lightly wet your palms with water.

    Place 1/2 cup flour in a shallow dish. Roll each polenta ball in the flour to coat evenly, shaking off excess.

    Heat 1 cup vegetable oil in a deep skillet over medium-high until shimmering, about 2 minutes. Fry the balls in batches without crowding, turning occasionally, until golden and crisp all over, about 4-5 minutes.

    Remove with a slotted spoon and drain on paper towels. Serve warm with marinara or aioli if desired.
