Ingredients

  • 2 large onion
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon baking powder
  • 1 cup sparkling water
  • 2 cups vegetable oil

    Slice the 2 large onions into 1/2-inch thick rings and separate them. Set aside.

    In a bowl, whisk together 1 cup flour, 1/2 cup cornstarch, 1 teaspoon baking powder, and 1/2 teaspoon salt. Gradually whisk in 1 cup sparkling water until smooth (batter will be thin).

    Heat 2 cups vegetable oil in a deep pot to 350°F (175°C). Dip each onion ring into the batter, letting excess drip off.

    Fry in batches without crowding, turning once, until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels and sprinkle with salt.
