Ingredients
- ½ lb ground beef
- ½ medium onion
- 6 empanada dough discs
- 2 cups vegetable oil
- ½ tsp salt
- ¼ tsp black pepper

In a skillet over medium heat, cook the 0.5 lb ground beef and 0.5 diced onion until the beef is browned and the onion is soft, about 8 minutes. Season with 0.5 tsp salt and 0.25 tsp black pepper.

Spoon about 2 tbsp of the beef mixture onto the center of each of the 6 empanada dough discs. Fold each disc in half and press the edges with a fork to seal.

In a deep skillet, heat the 2 cups vegetable oil over medium-high until a small piece of dough sizzles immediately when dropped in, about 5 minutes.

Fry the pastries in batches, without crowding, until golden brown and crispy on both sides, about 3 minutes per side. Drain on paper towels and serve hot.
