Ingredients
- 1 lb white fish fillets
- ½ lb shrimp, peeled and deveined
- 2 avocados
- 1 lime
- 2 cups corn tortilla chips
- ½ cup all-purpose flour
- 1 egg
- ½ cup vegetable oil
Instructions
- 1
Cut the 1 lb fish fillets into 4 portions and pat dry. Season both sides with salt and pepper.
- 2
Set up a dredging station: place 0.5 cup flour in one bowl, beat 1 egg in another. Dip each fish piece in flour, then egg, then back in flour; shake off excess.
- 3
Heat 0.5 cup vegetable oil in a large skillet over medium-high until shimmering, about 2 minutes. Fry the fish in batches without crowding, turning once, until golden and cooked through, about 3-4 minutes per side. Drain on paper towels.
- 4
In the same skillet, add the 0.5 lb shrimp and cook over medium-high, stirring, until pink and opaque, about 2-3 minutes. Season with salt and pepper.
- 5
Mash the 2 avocados with juice of 1 lime and salt to taste. Serve the fish and shrimp with guacamole, lime slices, and 2 cups tortilla chips.
- 6
Optional: add chopped cilantro or a pinch of chili powder to the guacamole for extra flavor.
