- 1 cup all-purpose flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- 1 tsp salt
- 1 cup water
- 2 cups vegetable oil

Cut the 1 lb fish fillets into 3-inch long strips, about 1 inch wide. Pat dry with paper towels.

In a bowl, whisk together 1 cup flour, 2 tbsp cornstarch, 1 tsp baking powder, and 1 tsp salt. Gradually whisk in 1 cup water until smooth batter forms.

Heat 2 cups vegetable oil in a deep skillet over medium-high until shimmering, about 5 minutes. Test with a drop of batter – it should sizzle immediately.

Dip each fish strip into the batter, letting excess drip off. Carefully place a few strips into the hot oil without crowding the pan.
