Ingredients

  • 1 lb white fish fillets
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup water
  • 2 cups vegetable oil

Instructions

  1. 1

Cut the 1 lb fish fillets into 3-inch long strips, about 1 inch wide. Pat dry with paper towels.

  2. 2

In a bowl, whisk together 1 cup flour, 2 tbsp cornstarch, 1 tsp baking powder, and 1 tsp salt. Gradually whisk in 1 cup water until smooth batter forms.

  3. 3

Heat 2 cups vegetable oil in a deep skillet over medium-high until shimmering, about 5 minutes. Test with a drop of batter – it should sizzle immediately.

  4. 4

Dip each fish strip into the batter, letting excess drip off. Carefully place a few strips into the hot oil without crowding the pan.

  5. 5

Fry until golden brown and crispy, about 3-4 minutes per side. The fish should flake easily when pierced with a fork.

  6. 6

Remove with tongs and drain on paper towels. Repeat with remaining fish. Serve hot with lemon wedges or tartar sauce if desired.
