Ingredients

  • 1 lb white fish fillets
  • 1 cup breadcrumbs
  • 1 large egg
  • 3 tbsp olive oil
  • 1 tsp liquid smoke
  • ½ tsp salt

Instructions

  1. 1

Pat the 1 lb fish fillets dry and season with the 0.5 tsp salt. Beat the 1 egg in a shallow bowl and place the 1 cup breadcrumbs on a plate.

  2. 2

Dip each fillet into the egg, then press into the breadcrumbs to coat evenly. Shake off excess and set aside.

  3. 3

Heat the 3 tbsp olive oil in a large skillet over medium-high. Fry the fish in a single layer until golden and crispy, about 3-4 minutes per side, until the fish flakes easily.

  4. 4

Drizzle the 1 tsp liquid smoke over the hot fish, turning to coat. Serve immediately, garnished with a few drops of extra liquid smoke if desired.

  5. 5

Optional: sprinkle with chopped parsley or a squeeze of lemon for brightness.
