Fried Fish and Plantains

Ingredients

  • 1 lb white fish fillets
  • 2 ripe plantains
  • 1 lime
  • ½ cup vegetable oil
  • 1 tsp salt
  • ¼ cup cilantro

Instructions

    Pat the 1 lb fish fillets dry and season both sides with 1/2 tsp salt. Cut the 2 plantains into 1/2 inch thick diagonal slices.

    Heat 1/4 cup vegetable oil in a large skillet over medium-high. Fry the plantains in a single layer until golden brown and tender, about 3 minutes per side. Remove and drain on paper towels.

    Add the remaining 1/4 cup oil to the skillet. Fry the fish fillets in a single layer until golden and flaky, about 3 minutes per side. Do not crowd the pan; cook in batches if needed.

    Serve the fish and plantains with lime wedges and sprinkle with the 1/4 cup chopped cilantro and remaining 1/2 tsp salt. Squeeze lime over everything before eating.
