Ingredients
- 1.5 lb chicken breast strips
- 1 cup all-purpose flour
- 2 large eggs
- 1.5 cup breadcrumbs
- ½ cup vegetable oil
- 2 cup chicken broth
- 2 tbsp butter
- 1 to taste salt and pepper
Instructions
- 1
Season the 1.5 lb chicken strips with salt and pepper. Set up three shallow dishes: 1 cup flour, 2 beaten eggs, and 1.5 cups breadcrumbs.
- 2
Dredge each strip in flour, then egg, then breadcrumbs, pressing to coat. Place on a plate.
- 3
Heat 0.5 cup oil in a large skillet over medium-high. Fry strips in batches until golden and cooked through, about 4 minutes per side. Drain on paper towels.
- 4
Pour out excess oil, leaving about 1 tbsp. Reduce heat to medium. Add 2 tbsp butter and 2 tbsp of the remaining flour, whisking until bubbly, about 1 minute.
- 5
Slowly whisk in 2 cups chicken broth, scraping up browned bits. Simmer until thickened, about 5 minutes. Season with salt and pepper.
- 6
Return the fried chicken strips to the skillet, turning to coat in the gravy. Serve hot, with lemon wedges if desired.
