Ingredients

  • 8 sheets rice paper wrappers (banh trang)
  • 1 cup rice vermicelli noodles, cooked and cooled
  • ½ cup cucumber, cut into thin matchsticks
  • 1 cup fresh herbs (mint, cilantro, basil), leaves
  • ¼ cup peanut butter
  • 1 whole lime (juiced)

Instructions

    Whisk peanut butter with lime juice and 3 tablespoons water until smooth and pourable. Season with salt and pepper to taste.

    Fill a shallow bowl with warm water. Dip one rice paper wrapper into water for 3 seconds until pliable, then lay flat on a damp surface.

    Layer a pinch of herbs, 2 tablespoons vermicelli, and 1 tablespoon cucumber in the center of the wrapper.

    Fold the bottom edge up, tuck in the sides, then roll tightly away from you until sealed. Repeat with remaining wrappers and fillings.

    Arrange rolls seam-side down on a plate. Serve immediately with peanut sauce on the side.
