Ingredients

  • 4 medium fresh peaches, ripe but firm
  • ¼ cup red onion
  • 1 whole jalapeño
  • 1 whole lime
  • 3 tablespoons fresh cilantro (optional)

Instructions

    Dice peaches into 1/4-inch chunks, discarding the pit. Transfer to a medium bowl.

    Mince red onion finely and add to the bowl.

    Seed jalapeño and mince finely. Add to the bowl (more seed and white = hotter).

    Squeeze lime juice over everything and stir gently to combine.

    Taste and add salt to taste. Stir in cilantro if using. Serve immediately or chill.
