Ingredients
- 4 slice bread slices
- 2 large eggs
- ½ cup milk
- 2 scoop vanilla ice cream
- 1 cup mixed berries
- 2 tbsp caramel sauce

In a shallow bowl, whisk the 2 eggs and 1/2 cup milk until smooth. Dip each of the 4 bread slices in the mixture, letting them soak for about 15 seconds per side until saturated but not falling apart.

Heat a large nonstick skillet over medium heat and add a little butter or oil. Cook the soaked bread slices for 2-3 minutes per side, until golden brown and slightly crisp on the edges.

Place the cooked French toast on plates. Top each slice with a scoop of vanilla ice cream and scatter the 1 cup mixed berries over the top.

Drizzle with the 2 tbsp caramel sauce and add a dollop of whipped cream if you like. Serve immediately.
