Ingredients
- 4 medium russet potatoes
- 1 cup plain yogurt
- ¼ cup chopped fresh parsley
- 1 clove minced garlic
- 1 tbsp lemon juice
- 3 tbsp vegetable oil
- 1 tsp salt

Preheat oven to 425°F. Scrub 4 medium potatoes and cut into 1/4-inch sticks; pat dry with a towel.

In a bowl, toss the potato sticks with 3 tbsp vegetable oil and 1/2 tsp salt. Spread on a baking sheet in a single layer.

Bake for 25-30 minutes, flipping halfway, until golden and crisp on the outside and tender inside.

Meanwhile, mix 1 cup yogurt, 1/4 cup chopped parsley, 1 minced garlic clove, 1 tbsp lemon juice, and 1/2 tsp salt in a small bowl.
