  • 1 lb boneless, skinless chicken thighs
  • 6 cloves garlic cloves, minced
  • ½ cup fresh lime juice
  • ¼ cup fresh cilantro, chopped
  • 1 whole red chili pepper, finely sliced
  • 2 stalks green onion, sliced thin

    Mince garlic cloves and set aside in a small bowl.

    Juice the limes to get 0.5 cup fresh lime juice.

    Heat 2 tablespoons olive oil in a 12-inch skillet over medium-high heat.

    Add chicken pieces in a single layer and let them sear 3 minutes.

    Toss chicken and cook another 3 minutes until golden on second side.
