Ingredients

  • 2 large (about 8 oz each) boneless chicken breasts
  • 4 cloves garlic, minced
  • 1 whole (juiced) lime
  • 1.5 cups cooked white rice
  • 8 oz frozen french fries
  • 2 cups (chopped) lettuce and tomatoes, mixed

Instructions

    Mix minced garlic, lime juice, and 3 tbsp olive oil in a bowl. Pound chicken breasts to even thickness, season with salt and pepper, then rub with the marinade.

    Heat a grill pan or cast iron skillet over medium-high until it shimmers. Sear chicken 5–6 minutes per side until internal temp hits 165°F.

    While chicken cooks, prepare frozen fries according to package directions (usually 12–15 min in oven or air fryer).

    Warm the cooked rice in a skillet or microwave until just hot, about 2–3 minutes.

    Toss lettuce and tomatoes with a pinch of salt, pepper, and a squeeze of lime juice.

    Slice chicken, then plate rice, fries, salad, and chicken together. Drizzle any pan juices over the chicken.
